These eastern Asian mushroom have an aromatic, fleshy, golden or dark brown to blackish cap. Also called Chinese black mushroom, golden oak mushroom, Oriental black mushroom, Emperors Mushroom. Shiitake mushrooms are known to help lower cholesterol and contain lentinan, which helps fight diseases and infections.

Shiitake mushrooms don't have to be used immediately. They'll stay fresh for up to 14 days if you keep them refrigerated. Store bulk mushrooms in a paper bag in the refrigerator.
