austiNuts began with founder Doron Ilai’s craving for the fresh, dry roasted nuts he grew up eating along the Mediterranean. After moving to Austin for graduate school, Doron couldn’t find anything that matched the taste and crunch he missed—so he set out to create it himself. In 1993, he opened the first austiNuts store, complete with custom-built dry roasting ovens and a focus on quality, freshness, and flavor.
The store quickly gained a loyal following, and in 2003, austiNuts Wholesale was born to meet growing demand. Though we closed our original retail shop in 2020, our products now ship nationwide through our online store.
