4 ripe tomatoes
2 tablespoons plus 2 teaspoon extra virgin olive oil
Sea salt and freshly ground black pepper
½ pound pasta
1 clove garlic, minced
2 tablespoons lemon juice
¼ cup basil leaves, roughly chopped
2 small zucchini, grated
- 1.Cut the tomatoes in half crosswise, brush with 1 teaspoon of oil and season with salt and pepper.
2.Oil the grill with 1 teaspoon of oil and set for high heat.
3.Bring large pot of salted water to a boil.
4.Add the pasta and cook until al dente. Drain and set aside.
5.Meanwhile, combine 2 tablespoons extra virgin olive oil, garlic, and lemon juice to a small glass bowl and whisk together.
6.Place the tomatoes cut side down and grill for 3 to 5 minutes.
7.Turn over and continue to cook for another 3 to 5 minutes.
8.Remove from heat and roughly chop. In a large bowl, combine pasta, grilled tomatoes, basil leaves, and zucchini.
9.Drizzle with dressing and stir to combine.
