Mango, Grape and Celery Salad

Shopping List

  1. Olive oil
  2. Black pepper
  3. Red pepper flakes
  4. Sea salt
  5. Celery (1 ct)
  6. White onion (1 ct)

Ingredients

  • 1 medium clove garlic, crushed
  • Juice of 1/2 lime
  • 1 tablespoon olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon sea salt
  • 2 cups mango, peeled and diced (1/4-inch) (use a fresh, green or half-ripe variety)
  • 2 cup red grapes, each cut in half
  • 1 cup diced celery, (1/4-inch)
  • 1 cup sweet white onion, diced

Directions

        1. 1.Whisk together the garlic, lime juice, oil, black pepper, crushed red pepper flakes and salt in a mixing bowl; let it sit for 5 to 10 minutes.

        3. 2.Add the mango, red grapes, celery and onion, tossing gently to coat and incorporate. Cover and refrigerate for a bit, until chilled, before serving. Discard the garlic.
