1 bunch kale, finely chopped
5-8 radishes, thinly sliced
1 avocado, chopped
1/2 bunch of parsley, chopped
1-2 tart apples, chopped
Feta cheese to taste
2-3 garlic cloves, minced
Chop all vegetables as directed and combine.
Add half the kale to start and add more as needed. It should be a good mix of all ingredients.
For the dressing, mix the garlic cloves with equal pars lemon juice and olive oil (at least 2/3 cup of each to cover salad).
Pour over salad as needed and toss. Lemon juice and hearty kale allow this salad to keep well over a few days!
