Veggie and Rice Casserole


1 cup corn
1 cup broccoli, chopped
1 zucchini, chopped
1 red bell pepper, chopped
½ cups shredded cheese (optional)
1 cup rice, cooked
1 jar of salsa, any flavor
1 15oz can black beans, rinsed
1/4 cup green onion (Optional)


  1. Preheat oven to 350 degrees. In a glass casserole pan, heat salsa and beans in oven for 5 minutes.
    Add veggies to salsa and beans and cook in oven till vegetables are soft (about 5-10 minutes). Mix in precooked rice and sprinkle top with cheese and green onion. Bake for about 20 minutes.
